In our greenhouse in Burg near Magdeburg, we started cultivating sea asparagus in 2020. It wasn’t easy, but we succeeded and are now the first and only horticultural business in Germany to produce Salicornia – sea asparagus from Saxony-Anhalt! Other names you might find for this fine salt plant include “samphire” or “glasswort” – they all mean the same. :)
So what exactly is Salicornia/sea asparagus? Salicornia is a plant native to our coasts, adapted to the unique salty environment there. The young shoots are harvested and offer a real taste experience. The green stalks are crisp, pleasantly salty, and delicately lemony. Definitely worth a try!
In the kitchen, this vegetable is very easy to prepare. Either raw as a snack or in salads, or lightly sautéed/blanched as a delicious side dish with fish, steak, lamb... Tip: scrambled eggs with tomatoes and sea asparagus.
For cultivating this fine vegetable, we completely avoid chemical agents and mineral fertilizers, following the principles of organic farming and horticulture.
And so you don’t have to go without this healthy vegetable in the winter months, we came up with another idea: dried and ground, the Salicornia plant makes a wonderful salty seasoning! SALS! :)
